For our Christmas Open House this year – we like to have one each year! for our family and friends – I have been so glad I have a Pinterest account. (My name is RachelinRaleigh.)
I’m pretty sure I can thank Pinterest for even thinking of having a “Happy Birthday Jesus” theme*, … though as a child we did have a party for Jesus and bake a cake… , and I know I can thank Pinterest for the no-bake cake truffles recipe I am going to share with you today. And that I’m going to make for the party. Yum yum yum!
No Bake Cake Truffles
(which, though I learned about this recipe on Pinterest, it’s from the blog Chef in Training who got it from The Girl Who Ate Everything / we are all for sharing! I did “personalize” it a bit because as I went through the recipe and made them, I changed the way it read because it made better sense to me!)
- ½ cup unsalted butter, softened
- ½ cup white sugar
- 1 ½ cups flour
- 1 cup yellow cake mix – NOTE THAT IT SAYS ONE CUP, NOT ONE BAG
- 1/8 teaspoon salt
- 1 teaspoon vanilla
- 3-4 Tablespoons milk
- 2 Tablespoons sprinkles
Beat together butter and sugar using an electric mixer until combined. Add cake mix, flour, salt, and vanilla and mix thoroughly. Add 3 Tablespoons of milk or more if needed to make a dough consistency.
TIP : This is something I learned from making a Southern Living pie crust recipe. Before adding the milk – and you will probably need more than 3-4 Tbsp., pile the dry mixture on one side of the bowl. A couple of tablespoons by a couple of tablespoons, pour the milk down the side of the dry-mixture pile. Then, fork the milk through the dry mixture onto the other side of bowl. Continue to do this until all of the dry-mix is wetted into a dough-like consistency.
Mix in sprinkles by hand. Roll dough into one inch balls and place on a parchment or wax paper lined cookie sheet. Chill balls in the refrigerator for 15 minutes until firm.
While dough balls are chilling, melt almond bark in the microwave in 30 second intervals until melted. Stir between intervals. Taking your time, use a toothpick and dip truffles into almond bark. Using a fork underneath the truffle, gently slide the truffle off of the toothpick and onto the cookie sheet. Top with sprinkles. Repeat with remaining balls until finished.
*Not to get too redundant, but really, if you would like to donate school supplies for the orphanage and school in India that the Matt Papa ministries is establishing, please let me know! I mention this again now because with our open house, we are collecting school supplies as the ‘gifts for Jesus’
