Breakfast, Lunch, or Dinner :: The Basic Quiche

The Homemade Gueyere Quiche Served For Laura's Baby Brunch

I read in a Real Simple magazine that “food is love” and while I am not sure that statement is completely true, I am sure that the act of making food – the time, the preparation, and the care – is an act of love. What a simple, every day way to express to your family, friends, and neighbors how much you love them!

I prepared Real Simple’s yummy Basic Quiche recipe for my friend Laura’s Baby Brunch and it was a success! I enjoyed putting together the ingredients, including grating the block of gruyere cheese, and the cheese browned beautifully. It kept well overnight in the refrigerator and re-heated quickly to serve in the morning to all of the guests.

Let us try to outdo one another in acts of love – even in simple ways, like preparing favorite comfort foods for our family and friends. Here’s the recipe – enjoying sharing this dish!

Basic Quiche

Ingredients

  • 1 9-inch refrigerated piecrust
  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • Kosher salt and black pepper
  • 1 cup fresh flat-leaf parsley, chopped
  • 4 large eggs
  • 3/4 cup half-and-half
  • 1/8 teaspoon ground nutmeg
  • 8 ounces Gruyere, grated
  • 4 cups mixed greens

Directions

  1. Heat oven to 375° F. Fit the crust into a 9-inch pie plate. Place on a baking sheet.
  2. Heat 1 tablespoon of the oil in a large skillet over medium-low heat. Add the onions and ½ teaspoon each of salt and pepper and cook, stirring occasionally, until soft, 5 to 7 minutes. Stir in the parsley.
  3. In a large bowl, whisk together the eggs, half-and-half, nutmeg, and ¼ teaspoon salt. Stir in the onion mixture and the Gruyère.
  4. Pour the egg mixture into the crust. Bake until a knife inserted in the center comes out clean, 35 to 40 minutes. Let sit for 5 minutes. Drizzle the greens with the remaining tablespoon of oil and sprinkle with ¼ teaspoon each salt and pepper. Serve with the quiche.

Snow Covered Chocolate Cupcakes

Throughout this winter season, Raleigh’s local weathermen have predicted winter weather and snow a few times without any snow actually sticking to the ground. Since snow is not common winter weather in Raleigh, when it does, the whole city is stilled. Everyone stays bundled up with their families in their warm homes and when the snow finally stops snowing, snowmen are built, snow cream is enjoyed, and snowball fights are won. Mittens drip dry over the tub after a day full of fun and sweet memories are made.

Whether or not it does snow tonight or tomorrow or anymore this wintry season, sweet memories can still be made.

This winter season, enjoy making this simple recipe with your family and sharing it after dinner with friends.

Make chocolate cupcakes just like whatever (box) recipe is your favorite. After the cupcakes have completely cooled, remove them from the cooling racks and place them on a serving tray. Then, lightly sprinkle confectionery sugar evenly over all of the cupcakes. We shared them with our friends, Courtney and Laura! Enjoy **

Help Haiti : Pray, Give, Go!

“Helping Out Haiti” :: It’s almost impossible to the watch the news, listen to talk radio, or read anything online without seeing some reference to the devastation in Haiti. The more I see the more I want to help. Last night my mind was racing thinking about all of the children who have died, all of the mother’s who are searching for their children and will never find them and all of the families who have been separated and live in fear that they may not see the rest of their family again. I’ve never experienced a pain like what the Haitains are experiencing right now. Being a photographer, who is waiting in eager anticipation for his first son, I feel like all I can do is pray. In this, I can’t help but feel the need to do something practical for those who are able to be in Haiti to help those who are hurting.

So from today until April 30, 2010

***  I will eagerly donate $100 for every client who books me for their wedding

*** I will eagerly donate $50 for every family or commercial shoot that I book

It’s me (Courtney Navey) trying to bring awareness to those around me about how great the need is in Haiti. I wish with all my heart that I could be in Haiti to bring the Gospel of Christ to those in need. Loving Others – Near and Far :: The earthquake in Haiti has caused massive destruction and suffering. The people in Haiti need help, and many thousands are responding. I’m pleased to report that Desiring God has partnered with three organizations, Food for the Hungry, Haiti Rescue Center, and Children’s Hunger Fund, to provide some relief to the immediate suffering in the country.

We know that in this world, there will be tragedies and suffering. As Christian Hedonists, we need to stand ready to give an account for the hope and confidence we have in Christ (1 Peter 3:15). But if we never step out to meet others, it’s not likely we’ll ever have a chance to tell of the hope we have in God.

With this in mind, here are some practical things we can do to love our neighbors:

  1. If you’re able, go. Go to Haiti and serve.
  2. Donate to churches and ministries that are working in Haiti.
  3. Volunteer in your city. Help immigrants learn English. Babysit a neighbor’s kids. Buy a Coke at a local market and get to know the clerk.
  4. Be ready to give an account for the hope that you have. As you serve, look for chances to talk about the good news of the Gospel. Ultimately, if we truly love our neighbors, we will care not only for their immediate physical needs, but their spiritual needs as well.

Stitch is one of my favorite local Raleigh stores. Holly Aiken, the owner of Stitch, sells her own designer handbags that are made on the second level her downtown storefront.
